Culinary tradition and technique
Pasta is the epitome of good Italian food and it is typically Mediterranean.
In Italy, a really good chef must be able to prepare a wonderful pasta dish as pasta is the supreme discipline of Italian menu.
This is why pasta dishes form an important part of my menu.
The pasta menu ranges from simple tagliatelle with tomato sauce to sophisticated tagliatelle foie gras with black truffles.
Meat and fish dishes are vacuum cooked – at a controlled temperature between 45-65 °C. This method ensures the food retains its original taste as well as the production of the exact temperature of the respective dishes .
Typical dishes such as escalope of veal or saltimbocca are naturally pan-sautéed in a traditional style.
